Organic grade AA matcha green tea, from the youngest leaves of Camellia sinensis (Yabukita cultivar) grown in the shade in China. Hand picked and stone ground, a process that produces a powder of exceptional fineness without heating the material.
A soft, naturally sweet aromatic profile, with pronounced umami notes and very little bitterness. Emerald green colour. This is the middle reference in the catalogue: a cup quality close to ceremonial grade, at a price that works for volume production.

The analytical values of the three grades are brought together in the matcha technical data sheet. Between Japanese ceremonial and culinary grade, grade AA sits on cup quality without the ceremonial price. The criteria for choosing are set out in ceremonial or culinary matcha.
