A word on EGCG
Matcha is naturally rich in epigallocatechin-3-gallate. The comparison explains why culinary grade is richer in EGCG than ceremonial grade. If your finished product is a food supplement or an extract, the daily portion must stay below 800 mg of EGCG. The applicable framework is set out on the page covering matcha regulation in the European Union.
